Lovin’ from the oven…
There’s nothing like the smell of freshly baked bread. For me, it conjures up memories of my grandmother’s kitchen. My grandma was always busy baking some kind of goody to send home with her guests. “Never leave them hungry” was her motto.
My favorite grandma treat, of course, was her warm, wonderfully nutty banana nut bread. Although this is not her original recipe for banana nut bread, it’s pretty close to what I can remember from my childhood. Every time I bake it, it’s like being at grandma’s house all over again.
Ingredients:
- 1 3/4 cups all-purpose flour
- 1 1/4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2/3 cup sugar
- 3/4 teaspoon salt
- 1/3 cup cooking oil (I use canola or olive)
- 2 eggs
- 2 tablespoons milk
- 1-1 1/2 cup mashed ripe banana (I add the 1 1/2 cup mashed banana because it makes the bread moister, and gives it a stronger banana flavor. Also, the riper the banana, the better it you want a strong banana taste to your bread)
- 1/4 cup chopped nuts (I use walnuts or pecans) – optional
Directions:
Stir together flour, baking powder, baking soda, and salt – set aside.
In a large mixing bowl beat together sugar and oil until light, scraping sides of bowl often. Add eggs, one at a time, and the milk, beating till smooth after each addition. Add the flour mixture and mashed banana alternately to creamed mixture, beating till smooth after each addition. Fold in nuts (nuts are optional).
Transfer batter into a lightly greased 8x4x2-inch loaf pan (or a loaf pan of comparable size). Bake in a 350 degree oven for 60 to 65 minutes or until a wooden toothpick or knife inserted near the center comes out clean. Cool in pan 10 minutes, then remove and let cool. For easier slicing, wrap loaf up and store overnight. (I let bread cool completely in pan, then remove or slice loaf while still in baking pan.)
My Personal Note:
I like to let the bread bake in the oven for approximately 30 minutes, then I cover with aluminum foil and let bake for another 30 minutes before removing from the oven to cool on the counter, uncovered. Enjoy!
