Oh so Tasty!
I love to bake yummy eats for my family, especially delicious quick breads. They’re easy to prepare, easy to bake, and work well as a dessert, snack, or my personal fave, breakfast.
This chocolate chip orange quick bread recipe (courtesy of tasteofhome.com) is easy to make, and the results are delicious! A very moist bread with a subtle orange flavor – very “coffee house”.
Ingredients:
- 4 tsp. grated orange peel (approximately 1 medium orange)
- 1/3 cup orange juice
- Boiling water
- 2 cups all-purpose flour
- 1 cup sugar
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1 egg
- 2 Tbs. butter, melted
- 1 tsp. vanilla extract
- 1 cup (6 oz.) semi-sweet chocolate chips – I would suggest using fewer chocolate chips as they seemed to settle to the bottom of the bread and were a bit much for my taste. If you LOVE chocolate, however, use the full 1 cup.
Directions:
First, place orange peel in a small bowl. Pour juice in a measuring cup, and add enough boiling water to measure 1 cup. Pour over orange peel and let stand for 10 minutes. (Instead of using bottled juice, take the time to squeeze the juice from the orange(s) you zested.)
Meanwhile, in a large bowl, combine flour, sugar, baking powder, salt, and baking soda. In another bowl, whisk the eggs, butter, vanilla, and reserved orange mixture. Stir into dry ingredients just until moistened. Fold in chocolate chips.
Pour into a greased 8″x4″ loaf pan (or 9″x5″ will work too – this is the size I use for baking quick breads). Bake at 350 degrees for 55-65 minutes, or until a toothpick inserted into the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack (I rarely take bread out and place it upon a rack to cool, so if you don’t have one it’s okay).
