Quick Chocolate Fix
Got a craving for something rich and chocolaty? This super easy vegan chocolate cake should do the trick. It’s quick, easy, and requires only a few simple ingredients. Even if you’re not a vegan (like me) you’ll still enjoy this simple, and very satisfying chocolate treat.
Ingredients:
- 1 1/2 cups all-purpose flour (I use unbleached)
- 1 cup granulated sugar (organic preferably)
- 1/3 unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/8 teaspoon fine sea salt
- 1 cup cold water
- 1/2 cup canola oil (organic expeller pressed preferably)
- 2 teaspoons real vanilla extract
- 2 tablespoons distilled white vinegar
Directions:
1. Preheat oven to 375 degrees.
2. Using an 8-inch square baking dish, add in the flour, sugar, cocoa powder, baking soda, and salt; mix well.
3. In a small bowl or measuring cup, combine the cold water, canola oil, and vanilla extract; stir slightly. Next, add the water/oil mixture to the dry ingredients in the baking dish, making sure to mix thoroughly (don’t forget to scrape the sides and corners of the dish).
4. Add in the distilled white vinegar, stirring quickly to mix. Immediately place into the preheated oven, and bake at 375 degrees for 25 minutes, or until the cake springs back when lightly touched.
5. When finished baking, place cake pan on a rack to cool completely, then frost with your favorite frosting if desired.
Note: This cake is so good (and moist) there’s really no need for frosting it. But if you’re family must have it (like mine), then I suggest using a chocolate butter frosting, or peanut butter frosting (my personal fave). If you’re making a homemade frosting, then I suggest making half the amount called for in most recipes since this cake is rather small.
