Vegetarian Recipes: Easy Lentil Curry

Meatless Monday Made Easy

Here’s an easy recipe for a quick and tasty vegetarian lentil curry.  Lentils are a great source of protein, high in fiber, and and loaded with other good stuff too.  Since there’s no soaking time on the lentils this recipe is done in about 35 minutes.

Ingredients:

  • 1 cup uncooked lentils (I use brown)
  • 6 cups water
  • 1 large onion, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon curry powder
  • 1 tablespoon ground coriander
  • 1 tablespoon valle del sol chili powder – this chili powder is a mix of chili peppers, cumin, garlic, oregano, coriander, cloves, and allspice.  I wouldn’t add a tablespoon of regular chili powder.  If you only have regular chili powder, then add in about a teaspoon instead, or to taste.

Directions:

Combine water and lentils in a large pot.  Bring to a boil, reduce heat and simmer about 20 minutes, until lentils are tender.

While lentils are simmering cook onions in oil over medium-high heat until they become translucent, about 5 to 10 minutes.  Add in spices and cook another 3 minutes.  Add onion mixture to lentil pot, cover and simmer another 15 minutes.  Serve hot over basmati rice or eat like soup with a dollop of plain yogurt and chives on top.  Enjoy! ;)

    • Thank you. I love lentils. They’re filling, easy to make, and inexpensive. I love that I don’t have to soak them over night like other legumes.
